Alcatraz island is not part of the itinerary of the tour, but you can choose to forgo the city tour and book a day tour to Alcatraz based on availability: https://www.tours4fun.com/tours/alcatraz-island/things-to-do/ Pickups out of San Francisco International airport can be arranged anytime between 9:00 am and 9:00 pm on day 1 of the tour.
